Matcha, Mint & Chocolate Energy Balls
Oh hey there! I’ve got another yummy Matcha recipe to share with you! I am so excited about it because it absolutely, mind blowing delicious. Seriously, chocolate and mint just does it for me this time of the year and if I know that it’s not all unhealthy (quite the contrary actually) it’s an “all-around-feel-good” snack!
Find my ingredients below:
• 150 g ground almonds
• 2 tsp matcha powder
• 1 tbsp coconut oil
• 2 tbsp maple syrup or other liquid sweetener
• 1/2 tsp peppermint extract (I used 5 drops peppermint essential oils)
• 50g dark chocolate chips
• 100g coconut chips.
Now mix it all up and start rolling your little balls. I kept some coconut aside to roll the balls into it. I guess you can keep them a while in the fridge since their is no dairy or egg involved, but I ate them in a heart-beat the next day on my travels to Germany.
